Ingredients
- 4 cups peeled and cubed potatoes
- 2 cups corn (canned or frozen)
- 1 T. Butter
- 1 Cup Evaporated milk
- 1 onion (chopped)
- 1 green chopped pepper (optional)
- Salt and pepper
Directions
Put potatoes and onion in a pan and boil. After potatoes are almost cooked, drain water. Put potatoes and onion mix into the pan and add water just so it is barely covering the top of the potatoes. Add butter, corn, peppers and evaporated milk. Bring to a boil, and the let simmer for 10 minutes. Salt and pepper to taste.
