Ingredients
  • 1 stick of butter (margarine is ok)
  • ¾ cup sugar
  • ½ lb. dates, sliced
  • 1 egg
  • Pinch of salt
  • 1 t. vanilla
  • 2 T. milk
  • ½ cup chopped nuts (walnuts or pecans)
  • Coconut sweetened and fine (not the flakes)
  • 2 cups rice krispies
  • Directions
Melt the butter in a skillet, add sugar and dates. Cook over medium heat for 3 minutes – so all is melted and mixed together.

Let cool (important so you don't cook the egg). Add egg, salt, vanilla, and milk. Turn up the heat again and stir for another 3 minutes or so.

Remove from heat and let cool slightly. Add rice krispies and nuts. Let cool for another 5 – 10 minutes.

Roll into little balls, and roll balls in coconut. Store date balls in freezer.
