Ingredients
- 1 stick of butter (margarine is ok)
- ¾ cup sugar
- ½ lb. dates, sliced
- 1 egg
- Pinch of salt
- 1 t. vanilla
- 2 T. milk
- ½ cup chopped nuts (walnuts or pecans)
- Coconut sweetened and fine (not the flakes)
- 2 cups rice krispies
Directions
Melt the butter in a skillet, add sugar and dates. Cook over medium heat for 3 minutes so all is melted and mixed together.
Let cool (important so you don't cook the egg). Add egg, salt, vanilla, and milk. Turn up the heat again and stir for another 3 minutes or so.
Remove from heat and let cool slightly. Add rice krispies and nuts. Let cool for another 5 10 minutes.
Roll into little balls, and roll balls in coconut. Store date balls in freezer.
