Ingredients

• 2 boxes Jiffy corn muffin mix
• Milk and eggs (for corn muffin mix)
• 1 lb. ground beef
• 1 package taco seasoning
• 1 green pepper (diced)
• 1 red pepper (diced)
• 2 cups shredded cheese
• Salsa and sour cream for garnish

Directions
Preheat oven to 400 degrees. Brown ground beef and drain exess grease. Season the beef with taco seasoning according to the directions on the package.

Mix one box of cornbread mix according to directions. Lightly spray 13x9 casserole dish with cooking spray. Spread cornbread mix in bottom of pan. Add taco meat to top of cornbread. DO NOT STIR. Add diced peppers to top of meat. DO NOT STIR. Sprinkle cheese over peppers. Again, DO NOT STIR. Mix second box of cornbread according to directions and spread gently across cheese, covering evenly. You guessed it... DO NOT STIR!

Cover with foil and bake approximately 30 minutes or until toothpick inserted in center comes out clean. Garnish with salsa and sour cream, if desired.
